Homemade nut butter has never been so easy!  Just one (maybe two) simple ingredients and a food processor.  Simplest and most delicious snack recipe you will ever make.

I have been making at least one day a week social media and computer free.  No intstagram, no Facebook, no working, no perusing the inter webs.  Usually I make this day Sunday and do a complete day of rest and focusing on my relationships with family, friends and God.  Well sometimes I like it so much that I don’t open my social apps until Tuesday! That happened this week and I am not complaining.  I worked on Saturday morning so I guess I needed a little more rest than the normal weekend.

There’s an example of how listening to your body and giving your brain a rest from stimulus is great! And we need to do that a lot more than we do.  It does not come naturally to us and if you ask Mr. HHT he will tell you I don’t ever just rest my brain (or my mouth).  I always am thinking about what’s next and verbally processing it.  He’s the most patient man there is with me.  🙂 So, I think he is more of a fan of this social media/no workie Sundays.

The process of making nut butter thrills me!!  It’s super noisy and loud and chemistry takes place.  I’m going to take you through making the best nut butter ever! I have made this stuff multiple times a week for the past year because we go through it soooo dang fast! Plus small batching always tastes better because its more fresh.

Best part about this recipe is there is no oil separation like you get with the store bought one ingredient nut butter.  When I buy those I always end up making a huge mess stirring in the oil.  No more mess with homemade nut butter!!

What you need:

  • nuts of choice (almonds, pecans, cashews, walnuts <— any combination of these would be delicious)
  • food processor
  • pinch of salt <— if desired
  • jar for storage

Yup that’s all you need!  Now on to how to know your nut butter is done.

The first 30-60 seconds are the loudest because the blades are chopping up the nuts to a meal.  If you needed a nut flour this would be the all the time you needed.  But we are going way past flour with this recipe!! 

Minutes 1-2 the meal will begin to creep up the sides of your food processor and you will have to occasionally scrape it down so it evenly gets blended.

Around minute 3 you will begin to notice that the meal is getting thicker.  This is what we want people! The oils are getting beat up are being extracted from the nuts.  The newly forming nut butter will begin to ball up and you may be tempted to stop but keep at it!  Remember the butterfly was a caterpillar before it became a perfect butterfly!

It’ll start to smooth out around minute 6 and if you want thicker less spreadable nut butter then by all means stop but I promise you won’t regret waiting another 4 minutes for the better stuff!

Ahhh, the most perfectly smooth nut butter occurs at 10 minutes.  You can be that patient I promise! It is well worth all the wait and all the noise.

And ta-da!!! After tasting this you won’t ever want to eat store bought nut butter again.  My favorite combination is about 1.5 cups of almonds and 1 cup pecans.  This will yield about 2 cups of almond butter.  I found that the 3:2 ratio is the best for flavor and consistency.  3 parts almonds and 2 parts other nut of choice.  Or you can go crazy and have 2.5 cups on the same nut.  There are so many options with making.

Secret time…. I’m all about finding a good deal.  You know how the good almond butter at the grocery store is at least $10?  Well, this can be made well under $10! Go to the blue section of your local grocery store and purchase your nuts there.  I can find a pound of almonds for $5.99 at our local Fred Meyer! That is usually at least 2 cups of nuts.  <— steal! A couple bucks cheaper than the same weight of pre-packaged almonds.  Now pecans will always be pricy so if you want to stay on or under budget opt for the almond butter.

I love eating my homemade nut butter with apples.  It has become our most favorite snack.  Or honestly just take a spoon into the jar for a quick in-between meal hold over.
