I’m joining my husband these next few weeks in Montgomery, AL while he’s training at SOS (Squadron Officer School).  So many acronyms in this military life people!  I’ll fill you in as needed.  At this school there are about 600 officers in each class, 4 squadron per class, 10 flight in each squadron and about 14 people in each flight… phew!

From the beginning of our married military life 5 years ago I have been making food to send Brenton into work with.  So this time at SOS is no different for us.  When I make a dish for Brenton to take into work a disposable pan is a must.  I mean I’m all for and heavily advocate for reusable dish-ware but sometimes its just easier for him not to bring it back! Plus with Ez Ovenwear Disposable Pans which can be used in the oven AND in the microwave it was an easy choice for this Goat Cheese Egg Casserole.

Breakfast Vegetarian Egg Casserole

I really should make these casseroles more often.  They are just way too easy and versatile!  Perfect for a brunch or when you have a lot of guests spend the night.  Think family visit or New Years Day! Plus with this disposable pan there is not messy egg clean up.

This Goat Cheese Egg Casserole I made is vegetarian because there is a member of B’s flight that doesn’t eat meat but I’ll probably add prosciutto to this to compliment the caramelized onions and goat cheese in the future!  So yeah, caramelized onions and roasted tomatoes with soft and salty goat cheese for breakfast?? Is there anything better?!?  I’m only bummed I had to share it.  Just kidding! It’s an absolute delight to feed the men and women who fight to keep our freedom daily.

Vegetarian Goat Cheese Egg Casserole

Instructions
  1. Heat coconut oil over medium heat. Sauté onions t until softened and caramelized, for about 15 minutes. Remove from stove top and EZ Ovenware container.
  2. Preheat oven to 350F. Add halved tomatoes into same pan and heat until softened. Add to EZ Ovenware container with onions and combine.
  3. In large bowl add eggs, milk, s&p to your taste preference. Whisk until combined. Stir in 2oz crumbled goat cheese.
  4. Pour over onion and tomato in the EZ Ovenware container. Crumble remaining goat cheese on top.
  5. Bake uncovered for 40-50 minutes or until mixture is set and top is lightly browned. Let stand 10 minutes before serving.
